I get access to cheaper flights due to working in the industry, so i feel the second best use of poitns is for hotels? What would be the best CC at the moment to use and convert to a hotel program?

That’s awesome you work in the industry and so have your flights “taken care of” so to speak. Fantastic stuff!
Regarding your options for hotels, I’m not too much of a full bottle on this aspect of rewards options, but I have used Qantas FF points to “pay” for accommodation in the past. I personally find it an expensive spend of points, however your mileage may vary given the need to save a large bucket of points for airfares is not an issue for you like most of us.

A great benefit of the AMEX program (especially the Platinum card) is Gold Elite membership with Marriott Bonvoy program (you have to manually enrol through your American Express account). This gives you such benefits as:
- Late checkout (subject to availability).
- Room upgrades (to enhanced rooms like those with better views or higher floors, also subject to availability).
- Bonus Marriott Bonvoy points on stays.
- Welcome gift of points at check-in.
Always check the terms and conditions of the card! 
There is also the Qantas American Express Card which earns you Qantas points directly, rather than needing to convert them from AMEX points:
