Are there any uncapped points earning credit cards out there other than Amex with huge annual fees? or at least a decent size cap?

Hey John - if you’re putting enough through a card each month that you’re worried about some of the caps out there, then some of those cards with “huge annual fees” may still be a good deal for you.

There is a column stating the cap for the individual cards on this table below.

Those without a cap number are uncapped from what I can tell.
