Our dates are flexible, one way flight around March next year. Just trying to decide if 55000 each person economy is the way to go with Emirates or whether to separate the legs and go the longer leg (perth to Dubai) with Business and the day leg (dubai to Oslo), economy. We have an infant with us too. Or is there a whole different way, or different options like the new Qantas Dreamliner?? Anyone able to help out a rookie point user?

With your point balance, I personally would suggest PER-DXB flying with Emirates in business class for 72k Qantas points each. You could consider buying an economy seat onwards to Oslo.
First thing first would be to check whether there are available Classic Reward seats for Mar 2018.
With redemptions with Qantas, infants fly for free! =D
